Mmmmmm, good! After mom got ahold of this recipe, it started showing up
at every family event!
5 lbs. potatoes, boiled with skins on
1 c. melted butter
parsley flakes, fresh if possible
2 green onions with tops, chopped fine
2 slices bread, cut into small cubes
salt and pepper to taste
1 lb. bacon, fried and cut into small pieces
2 lb. Velvetta cheese, cut into cubes
Cut boiled potatoes into small pieces, as if for potato salad. Put in large
bowl and mix all other ingredients in gently by hand. Put in casserole dish, cover, and refrigerate overnight.
Heat oven to 350 degrees. Pour 1/2 c. milk over the top of the casserole
and sprinkle with a little paprika. Bake for one hour or till light brown in cover.
