You might want to double up on this and make two pies, because one never
seems to be enough!
Pastry Cream:
1/4 c. sugar
1 tbsp. flour
2 tsp. cornstarch
1 large egg
1 c. milk
2 tbsp. soft butter
1/4 tsp. vanilla
Sift sugar, flour and cornstarch together in mixing bowl. Add egg and beat
until light. Bring the milk to a boil in a pan. Add a small amount of the hot milk to the egg mix and blend quickly, then
add the rest of the hot milk and butter. Return mixture to milk pan and cook until thickened. Add vanilla, mix, and let cool
slightly.
6 medium bananas
1 c. orange juice
1 9-inch baked pie shell
Peel bananas, cut in half lengthwise and then slice up into pieces. Toss
with orange juice. Drain well. Fold bananas into pastry cream mix. Pour into cooled shell and cover with whipped cream
or Cool Whip.
