This cake was often made for showers and special occasions. The German
ladies all made it, and it was always on the counter in Schnitzler households.
3/4 c. Crisco
1 1/2 c. sugar
2 eggs
1 c. mashed bananas
1 tsp. vanilla
1 tsp. baking powder
1 c. sifted flour
1 tsp baking soda
1/2 c. and 2 Tbsp milk
3/4 c. chopped walnuts
Cream together the Crisco, sugar and eggs. Add bananas and vanilla and
mix. Add dry ingredients and nuts. Beat well. Bake in 2 9-inch cake pans at 350 degrees for about 30 minutes or until lightly
brown. (You can dust the nuts lightly with flour before adding them to the batter if you want to even them out through the
cake more. Sometimes they sink to the bottom because they are heavy.)
Mock Whipped Cream Icing
1 c. granulated sugar
1/2 c. white Crisco
1 stick of margarine
3/4 c. fairly warm milk
Dash of salt
1 tsp. vanilla
Beat sugar, Crisco and margarine together until very fluffy and creamy.
Add milk 2 tablespoons at a time, keeping the milk warm until it is all added, while continuing to beat the mixture. Add salt
and vanilla. Beat, beat, beat!
